Day 8: an added extra

Sweet thingsA dear friend (yes, whose surname happens to be Coventry, incase you were wondering) made these carob treats for a Transition event I went to on full moon night last week. You'd never believe that they're totally legit on the detox diet! Haven't even got sugar in them!Coventry Detox Biscuits25g hazelnut oil or sunflower oil25g coconut oil1½ tbs agave syrup1½ tbs maple syrup1½ tbs date syrup25g corn flour20g carob powder or more if desired75g ground rice or rice flourGram flourChopped nuts e.g. hazelnuts or pecans if like, or dried fruitPut the sunflower oil and coconut oil in a mixing bowl. If the coconut oil is solid either put the bowl in a microwave and heat for a short time so the coconut oil melts or heat them in a pan instead. Add the syrups and then the corn flour, carob, ground rice and chopped nuts (if using) and mix everything together. Finally add enough gram flour to bring the mixture to a firm consistency. If consistency becomes too firm add a little apple juice. Either roll into small balls or put large teaspoonfuls of mixture onto an oiled baking tray. Decorate with a pecan nut or coconut flakes. Bake for 8 to 10 minutes at 180°C (Gas mark 4) or until cooked. Allow to sit for 2 minutes and then transfer to a cooling rack. Add a mixture of nuts and fruit as takes your fancy until you have a fairly stiff consistency. Press into a baking tray lined with greaseproof paper and place in the fridge.
